National Bake Cookies Day

Tomorrow is Saturday, Dec. 18,  2021, and it is also Bake Cookies Day! This time of year several of us are spending extra time in the kitchen baking up delectable desserts, including cookies! After all, it won’t be long before it’s time to leave cookies out for Santa Clause. We did some research and compiled some easy cookie recipes that you can bake up with ease.

Easy Sugar Cookie Recipe

With just three ingredients, these cookies are a cinch to make! All you need is unsalted butter, granulated sugar, and flour. You may choose to add a pinch of vanilla or sprinkles.

Make the dough: beat together butter, sugar, and flour until blended.

Form the cookies: Form the dough into 1-inch balls. Roll the balls in sugar and then flatten them with a glass or measuring cup.

Bake: Bake at 325 until just barely golden brown around the edges and bottom.

Rest: Let rest and cool for at least 10-15 minutes before eating.

Peanut Butter Blossoms

Everybody loves peanut butter and Hershey’s kisses. Why no combine the two?

Ingredients

48 Hershey’s Kisses

½ cup shortening

¾ cup creamy peanut butter

1/3 cup granulated sugar

1/3 cup packed light brown sugar

1 egg

2 T. milk

1 Tsp. vanilla extra

! ½ cup all-purpose flour

1 tsp. baking soda

½ tsp. salt

1/3 cup granulated sugar for rolling

Instructions

  1. Heat oven to 375°F. Remove wrappers from chocolates.
  2. Beat shortening and peanut butter in a large bowl until well blended. Add 1/3 cup of granulated sugar and brown sugar; beat until fluffy. Add egg, milk, and vanilla; beat well. Stir together flour, baking soda, and salt; gradually beat into peanut butter mixture.
  3. Shape dough into 1-inch balls. Roll in granulated sugar; place on ungreased cookie sheet.
  4. Bake 8 to 10 minutes or until lightly browned. Immediately press a chocolate into the center of each cookie; cookie will crack around the edges. Remove from cookie sheet and onto a wire rack. Cool completely.

Kris Kringle Cookies

These festive cookies are red and green and so much to make and serve!

Ingredients

1 cup softened butter

1 ½ cups granulated sugar

2 eggs

1 teaspoon vanilla

1 teaspoon peppermint extract (or almond, lemon or, mint)

½ tsp. baking soda

3 cups all-purpose flour

Powdered sugar

Instructions

  1. Cream the butter and sugar until completely combined.
  2. Add in eggs, vanilla, and peppermint extract and mix until the dough is fluffy.
  3. Add in the Baking Soda.
  4. Mix in the flour, a third at a time.
  5. Split into two portions and color one red and one green.
  6. Refrigerate the dough for 2 hours.
  7. Roll dough into balls.
  8. Place the cookie dough ball in a bowl or plate of powdered sugar and roll the cookie dough ball in the powdered sugar until it is covered.
  9. Bake in a 350-degree oven for 9-10 minutes.
