Chocolate Caramel Fondue

Ingredients

• 1 (16-ounce) bag semisweet chocolate morsels
• 1 cup store-bought caramel sauce
• If you do not have a jar of caramel sauce– make your own with a cup of brown sugar, 1 stick of butter, a 1/4 cup of heavy whipping cream, and 1 teaspoon of vanilla extract
• 1/2 cup milk (preferably not skim)
• An assortment of “dunking” materials: favorite fruit, marshmallows, graham crackers, etc.

First, melt your chocolate in a double boiler or a large bowl set over simmering water or in the microwave for a few minutes.

If you do not have store-bought caramel sauce—in a small saucepan, melt together a stick of butter on a cup of brown sugar. Stir the mixture until bubbling, then reduce your heat to low. Continue to cook until it starts to thicken, then add your 1/4 cup of whipping cream and teaspoon of vanilla.

Stir your caramel sauce and milk into your chocolate mixture until blended and smooth. Remove your fondue mixture from heat and transfer to a serving bowl. Lastly, arrange your dunking materials around the chocolate mixture and start dipping.

• 3 cups semisweet chocolate chips, divided
• 3/4 cup butter, divided
• 1 (14 oz.) can Sweetened Condensed Milk
• 1 tsp. vanilla extract
• 2 cups All-Purpose Flour
• 1 cup of sugar
• 1/2 cup heavy cream, divided
• 1.5 cups marshmallow cream
• 1 cup Creamy Peanut Butter, divided
• 1.5 cups salted peanuts, finely chopped
• 1 (14 oz.) pkg. caramels, unwrapped
• 1/4 cup butterscotch chips

First, heat your oven to 350 degrees F. Coat a 13×9-inch baking pan lightly with non-stick cooking spray. Next, melt two cups chocolate chips and a 1/2 cup butter over low heat in a medium saucepan. Stir until smooth. Remove the mixture from heat and add sweetened condensed milk and vanilla. Stir in your flour. Spread the dough into a prepared pan, then bake for 12 to 15 minutes, then allow it to cool.

As your baked mixture cools, melt 1/4 cup butter in a medium saucepan over medium-high heat. Stir in sugar and 1/4 cup cream. Boil for five minutes. Remove from heat. Stir in marshmallow cream, 1/4 cup peanut butter, and peanuts. Spread evenly over your baked layer and allow it to cool.

Next, cook your caramels and 1/4 cup cream in a small saucepan over low heat, stirring until caramels are melted and smooth. Spread over the marshmallow layer. Cool until set.

Lastly, combine 1 cup chocolate chips, butterscotch chips, and 3/4 cup peanut butter in a small saucepan. Cook and stir over low heat until melted. Spread over the caramel layer. Chill for 30 minutes or until set.

Warm Flourless Chocolate Cake with Caramel Sauce

Ingredients

• 1 cup butter, cubed
• 8 ounces semisweet chocolate, chopped
• 1 ¼ cups white sugar
• 1 cup unsweetened cocoa powder
• 6 eggs
• 1 cup brown sugar
• 1 stick of salted butter
• 1/4 cup of heavy whipping cream
• 1 teaspoon vanilla extract

First, preheat your oven to 350 degrees F. Butter the bottom of a 10-inch springform pan and line with parchment paper.

Next, melt your butter in a large saucepan over low heat. Stir in your chocolate, continuing to stir until almost melted. Then remove your chocolate from heat and stir until melted and smooth. In a large bowl, stir together 1 1/4 cups sugar and the cocoa powder. Whisk in the eggs until well blended, then whisk in the chocolate and butter. Pour your batter into the prepared pan.

Bake your batter for about 45 minutes, or until the edges of your cake have puffed and the surface is firm except for a small, jiggly spot in the center. Cool your cake in the pan over a wire rack. Run a knife around the sides of the pan to loosen the cake, then remove the sides of the pan and invert onto a serving plate. Remove the parchment paper.

In a heavy saucepan, melt a stick of butter on your stovetop with your cup of brown sugar. Stir the mixture until bubbling, then reduce your heat to low. Continue to cook until it starts to thicken, then add your 1/4 cup of whipping cream and teaspoon of vanilla.

Cut the cake into wedges while warm and serve with caramel sauce spooned over it.
